What is Dulce de Leche?

Dulce de leche is a thick, amber-colored confection made by slowly simmering sweetened milk until its sugars caramelize and the milk reduces to a silky, spoonable cream. It is the defining filling of the South American alfajor and a staple ingredient across Latin American pastry, ice cream, and breakfast tables.

Dulce de Leche vs. Caramel

Caramel is made by melting dry sugar until it browns, then enriching it with cream or butter. Dulce de leche works the opposite way: milk and sugar are reduced together from the start, so the browning comes from the Maillard reaction between milk proteins and sugars rather than from burning sugar alone. The result is creamier, less sweet, more stable for baking, and far richer in dairy character than traditional caramel.

History & Heritage

Dulce de leche emerged in the 19th-century Río de la Plata region, with origin stories shared between Argentina and Uruguay — including the legendary tale of a cook who forgot a pot of sweetened milk on the fire and returned to find the now-iconic spread. From there it spread across Latin America under names like manjar, arequipe, and cajeta, and today anchors the alfajores we import for North American grocery and foodservice channels.
